CHIP IN :: We’re crazy for kale, the nutrient-rich superfood that can be enjoyed in myriad ways. But we’re also crazy for the divine taste of a good salty potato chip – a no-no for reasons ranging from waistline to heart health to the way our digestive system hates us later.

So you can imagine the sheer joy that came when we discovered an honest-to-goodness substitute to ease our cravings that’s super easy to make: kale chips.

The best part is it takes no time. Tear kale leaves into 1 1/2 inch pieces, discarding the stems. One big bunch of kale makes one big bowl of chips. Toss the kale with 2 tablespoons of extra virgin olive oil and coarse salt. Roast from 12-15 minutes at 400 degrees or until lightly browned and crispy. Eat and treat like potato chips.
